METHOD OF PREPARATION:
Leave approximately 1 liter of vegetable broth simmering on low heat next to the risotto pot. In a saucepan, melt 1 tablespoon of unsalted butter with a drizzle of olive oil and sauté 1/2 onion with 1 clove of garlic. Add 1 cup of Risotto Rice Guacira and 100ml of dry white wine, stirring constantly until the wine evaporates. Add two ladles of broth to start cooking, stirring constantly. Keep adding ladle after ladle, without stopping stirring the risotto in the pan, until you see that the rice has absorbed the broth well and looks cooked. Taste to see if it's al dente, add the special ingredients for your recipe and correct the salt if necessary. Add another spoonful of cold butter for creaminess and 40g of grated Guacira cheese. Turn off the heat and mix gently until the butter melts and the cheese is incorporated into the risotto.
